Gluten free, vegan and nearly sugar free Mince Pies


Ingredients:

For the base:

170g Oat flour

130g gluten free flour

4.5 Tbsp. almond butter

1-2 Tbsp. maple sirup (or dates mixed in a blender)

For the Filling:

80g sultanas

80g cranberries

80g apricots

1/2 cup mixed nuts

2 Tbsp. cognac (optianal)

zest of 1 organic unwaxed lemon

juice of 1 orange

Oven Temperature:

180c

Cooking Time:

30min.

Methode:

Mix the ingredients for the filling together, cut the apricots very fine and add to the dried fruit..

Then add the zest of the lemon, the cognac and the juice of the orange, mix well and leave overnight.

Next day add the flour the almond butter and maple sirup or dates and mix so you get the texture of a crumble.

Press the pastry into a pie tray,

top up with the Filling

and cap off with a pastry lid.

Add into the oven for half an hour.
